Assorted Sides

These sides are specifically in reference to the "Tilapia" post i just put up, but they really work in whatever meal you think they'd go good with.

Spicy Pineapple/Red onion rice
1 cup brown rice
½ of a red onion
1 can of pineapple chunks (only the actual chunks are needed, see the pineapple tilapia recipe to use the juice)
Caribbean jerk
Garlic salt
Canola oil

Directions:
Make up a cup of brown rice before hand, following the instructions on the bag (I go for the 45 minute instructions).
Let rice cool.
Dice up ½ of a red onion.
Add canola oil to a hot pan or wok.
Sauté the onion and 2/3 of the pineapple (I usually eat the other 1/3 while I’m cooking…).
Once the onions start to caramelize and the pineapple is quite warm, add in your rice for a quick stir fry.
Stir in caribbean jerk and garlic salt (the jerk is usually spicy, so a little goes a long way… I personally like a good journey).
Plate hot.

Sautéed green beans
Frozen green beans
Minced garlic
Soy sauce
Water
Canola oil

Directions:
Heat up oil in a pan.
Put 2 servings worth of green beans into the pan.
Add ½ a cup of water, cover, and let simmer.
When the green beans are thawed, add soy sauce and recover.
Once most of the liquid is gone, add a teaspoon of sauted garlic and stir for a minute or so.
Serve when there is almost no liquid left, before the garlic really starts sticking and burning.
**Note** This is a very “eyeballed” recipe I’ve done many times. I don’t know the actual amounts of the ingredients, but hopefully, after a try or two, it will become very intuitive on how much soy sauce to add and how long it takes to cook. I usually start this at the same time I start my Tilapia and they finish around the same time.

Fresh broccoli
Optional:
Lemon juice
Garlic salt
Red pepper
Caribbean jerk
Black pepper
Lawry’s Marinades (Lemon Pepper, Caribbean Jerk w/ Papaya, Hawaiian, ect.)
Tony Chachere's: Creole Original Seasoning
Whatever you think would go to sprinkled on

Directions:
Boil water in a pot and put a steamer on top.
Add washed florets of broccoli and sprinkle on your topping.
Cover.
Steam till soft and serve.
